Your journey of creating the mozzarella cheese begins by gathering the ingredients. However, adding the ingredients in the right proportion enables you to get the best cheese ever. 

Step 1: Gather Your Ingredients:

To start the journey to make cheese more cheesy and flavorful, assemble the following:

  • Whole milk (1 liter)
  • Citric acid (1.5 teaspoons)
  • Rennet tablet (¼ tablet, dissolved in 60ml of water)
  • Cheese salt (1 teaspoon)

Step 2: Acidify the Milk to Make Pizza Cheese:

Once you have gathered all the ingredients required to make pizza cheese, you can now move toward acidifying the milk. However, acidifying is the process of adding a starter culture to milk to change lactose (milk sugar) into lactic acid. Thus, this changes the acidity level of the milk, and it begins to process by turning milk into solid form. There are two steps to acidifying the milk.

  1. Heat the Milk: Pour the whole milk into a large pot and heat it to 32°C.
  2. Add Citric Acid: Dissolve the citric acid in a quarter cup of cool water, then add it to the milk, stirring gently.

Step 3: Coagulate the Milk:

Once you have acidified the milk, you will now be coagulating it. Add rennet to make pizza cheese perfectly by dissolving it in the milk. However, stir it up and down for up to 30 seconds. Cover your pot and let the milk set undisturbed for 45 minutes. There should be a clean break in the curd.

Step 4: Cut and Cook the Curd:

Your curd is now ready to cut and cook. Thus, cut the curd into small pieces and let it rest for five minutes. However, you need to heat the curd to 40°C while stirring continuously.

Step 5: Form the Curds into Cheese:

Drain the whey from the curds using a slotted spoon or cheesecloth. In addition, microwave the curds for 1 minute, then stretch and fold them. Keep repeating the process three times. Lastly, add the salt to the cheese and knead it into the curd. However, you can shape the mozzarella into balls or any of your desired shapes. However, you can use it right away for your pizza, but letting it sit for a few days will give it a firmer texture.
